I’m home alone for the next few months while my mum goes galavanting off around the globe.
As she has taken to doing once a year.
I made Crispy skinned salmon, with roasted honey veggies and so glorious black lentils with a dijon mustard dressing.
And I’ve lost a kilo (I’m pretty sure I stress eat when she’s around)
And tonight I’ll be roasting chicken and serving it with the remainder off the veggies and the lentils.
